The highest quality soba flour available anywhere, just arrived overnight directly from the mill in Japan. This 100% buckwheat flour is slowly milled in a traditional stone mill to produce delicious and easy-to-make-at-home soba noodles. With pure Sobakoh flour and/or with Sonoko’s step-by-step noodle workshops (see Cook With Me), you can make delectable fresh soba in your very own kitchen. 16 oz will yields 4-5 servings of soba noodles.
With this Sobakoh buckwheat flour, you can also make a Nihachi-style Sobakoh by blending this buckwheat flour with wheat flour. To do so, combine 80% Sobakoh and 20% all purpose flour, by weight. Nihachi-style soba noodles are easier to make into noodles than using 100% Sobakoh. Flavorwise, Nihachi style soba has a nice smooth chew and it has been the most popular soba in Japan for centuries.
