WHY CURRY POWDER?

 

The earliest version of my curry powder and curry brick recipes first appeared in the New York Times and featured in my latest book Japanese Home Cooking (Roost Books Fall 2019). I was excited about promoting my book and introducing Japanese curry as one of the easiest and satisfying dishes to make. But then the pandemic happened. All my in-person workshops and book tours were erased from the calendar of events. I found myself hunkered down at home like everyone else in the world.

As a home cooking advocate, I realized there was no better time than now to promote home cooking. So I switched from teaching in-person workshops to offering cooking webinars, and as a result, I discovered a much broader audience of cooks around the country and even overseas. Throughout this pandemic period, my DIY curry brick kit became a convenient and essential survival food for many. My quiet “soba room” once used primarily for practicing noodle-making gradually turned into a busy cottage operation room filled with aromatic and colorful spices.

Then some people began asking me to make a curry powder product that is used in my curry brick kit recipe, because not everyone has a dedicated spice grinder. So after many months of fine-tuning and preparation, I am proud to present Sonoko Curry Powder - a versatile, mild and aromatic curry powder made with a combination of sixteen carefully and sustainably sourced spices and herbs. This mild curry powder is blended to achieve a harmony of spices, incorporating the earthiness and savoriness of cumin, turmeric and bay leaf, the sweetness of all-spice, cinnamon, fenugreek, and clove, the brightness of black pepper, the heat of cayenne, the citrusy aroma of coriander and cardamom, the umami of shiitake mushrooms and kombu seaweed and more, so that at the end, no single spice or herb overwhelm one another. I am also excited about working with companies like Diaspora Co. and Yagicho-Honten that support farmers, fishermen and artisans who work the land and sea to make good food available to us.
