Purchase includes 200g uncooked fresh soba noodles, and 100ml of mentsuyu dipping sauce.

Fresh, nihachi soba noodles, handmade by Sonoko Sakai herself using imported milled-to-order Japanese buckwheat flour. Offered with savory, traditional dipping sauce to be enjoyed “zaru” style, with the noodles quickly dipped in the sauce before slurping.

When ready to eat, bring a large pot of water to a rolling boil. Once boiling, cook the noodles for 60-90 seconds. Stirring gently once, only to separate the noodles, being careful not to break them. Drain in the sink, and rinse vigorously under cool running water, until noodles are cool to the touch. Drain and tap the base of the strainer to remove any excess water. Do not shake the noodles. SERVE IMMEDIATELY. Option to shock in ice bath and drain again before serving.

To serve, place drained cool noodles on plates or shallow bowls alongside a small bowl of chilled dipping sauce. Top the noodles with shredded nori strips. Sauce can be finished with thin sliced scallion, grated daikon radish, and a dab of wasabi paste, to diner’s liking. Using chopsticks, pick-up a small bunch of noodles, dip into the sauce 1/3 up the length of the noodles and then slurp up! Enjoy alongside the sides of your choosing, such a grilled meats, seasonal vegetables, or even a medium-boiled seasoned egg.

Consume within 2 days of picking-up. Refrigerate until ready to cook.

Ingredients: Soba noodles (buckwheat flour, all purpose flour, filtered water), mentsuyu dipping sauce (filtered water, soy sauce, mirin, cane sugar, bonito flakes [omitted in vegan option], shiitake mushroom, kombu seaweed).
