This Japanese Nishin medium-protein wheat flour is excellent for use in making fresh udon noodles. Using this flour produces noodles with great chew and slippery mouth feel. Instructions for using this flour to make udon noodles can be found in my cookbook, Japanese Home Cooking, or by cooking along with me during one of my workshops. 16 oz will yield 4-5 servings of udon noodles.
